The Secret to Making Great Ice Cream

In our party circles, I’ve become known as “the ice cream guy.” Few foods are as universally liked as ice cream – especially great ice cream. It took me a long time to get to this point, but now I’m ready to share my secrets.chocolate-ice-cream

In reality, like most tasty food, the key is to start with high quality ingredients. You can grill a steak perfectly, but if the meat isn’t fresh and tasty to begin with, you’ll never end up with a juicy, mouth-watering, steak on the dinner table.

Ice cream is exactly the same.  You’re going to taste each ingredient because there are only a few ingredients in ice cream. So you only want use ingredients that taste really good! But I’m sure you know that. More likely, you’re reading this because you are having some of the same problems I have run into when making a batch – icy ice cream that lacks that depth of flavor that makes people really smile.

Where oh where to get your cook ware? Cookery Ware in Lahaska!

In my quest to find and bring you all good things related to food in the Delaware River region, I decided to change course from my normal restaurant hidden gems and found myself at the Cookery Ware Shop in Lahaska / Peddler’s Village.

I “discovered” this hidden gem a few years back when I was looking for some cast iron pans. What I found was an amazing collection of essential items for chefs of all levels, from the beginner to the seasoned professional.

In this day of instant Internet gratification, it’s so easy to just click a button and place an order that I often forget about local retail stores. But when it comes to items for my home, there’s nothing like putting my hands on them. If I’m buying a knife for potentially hundreds of dollars, I want to feel the curves of its handle and feel its heft. I want to see its exact shape and size. Do I need a 6″ or 8″ blade? I need to handle it to see what’s right – something I’m not going to get from the Internet. For items like these that I’ll use constantly, I want them to be “just right.” That’s where the Cookery Ware store comes in.

If you’ve been following my posts or Facebook page, you know that I’ve become a *huge* fan of The Farm Cooking School. Maybe it’s because every week I get to help prepare and eat a gourmet lunch. But I think it’s because they’re teaching me the foundations of how to really cook. Skills that I’ll use for the rest of my life.

This week’s class was about roasting. Sure, roasting, I thought. Toss something in the oven. Let it cook until it smells good. Voila! Well, maybe not…

The Farm Cooking School is what you get when you combine world-class chefs, avid foodies and the farm culture along the Delaware.

We are incredibly fortunate to have this gem, hidden in our backyard. In fact, I was happier to find the Farm Cooking School than I would have been if I stumbled upon a real diamond in my lawn. After all, learning how to cook is gives me a skill that I will enjoy for the rest of my life, while a diamond is just pretty to look at.

What’s Happening Memorial Day Week

By now, you’ve probably had your share of dogs, burgers and potato salad and you’re wondering what to do the rest of the week.

There’s a great trend in dining that’s showing up everywhere this year – Farm to Table. While many trends are just for show, this is one that foodies can really get behind because it’s resulting in delicious dishes, with ingredients sourced from local farms. It’s like taking a step back in time before factory farming and the homogeneous mediocrity it produces.

Many restaurants along the Delaware, especially those in the New Hope and Lambertville areas, regularly source as much local produce as possible during the growing season. Some even get meats locally. Griggstown chickens are popular on many menus.

The following is the “short list” of restaurants that tout their local fare where you can eat this week. Click the links to learn more:

  • Blue Bottle Cafe – Hopewell, NJ
  • Caleb’s American Kitchen – Lahaska, PA
  • Duck Soup Cafe – New Hope, PA
  • Hamilton’s Grill Room – Lambertville, NJ
  • Hearth – New Hope, PA
  • Liberty Hall Pizza, Lambertville, NJ
  • Nomad Pizza – Hopewell, NJ
  • Pineville Tavern – Pineville, PA
  • Sprig and Vine – New Hope, PA
  • Tastebuds – New Hope, PA
  • Teaberry’s Supper Club – Flemington, NJ
  • Yardley Inn – Yardley, PA

There’s no better way to start a comment-war than by posting about pizza. Everybody has an opinion about “America’s favorite food.” But people from few places actually deserve to have those opinions as much as the residents of the Delaware Valley. Or more specifically, people living in the area centered around Trenton, NJ.

Whether you live along the Delaware or are just visiting and want a great slice of “pie,” the new pizza page will get you pointed in the right direction. Be sure to vote in the poll at the end of the page and submit your favorite pizzas and restaurants. I’m sure there’s lots of research to be done. It’s a tough job, but I’ll make the sacrifice and commit to it. Mmm, pizza…

Any time you want to go to the pizza page, just click on the “pizza, pizza!” link in the menu bar at the top of the page. Or, bookmark the pizza page, linked to here.

P.s. I admit that the page is *ugly*, looking like something a slow 12 year old would have put together in the 1990’s. Maybe some day I’ll develop some modern web skills and sense of aesthetics, but for now, as Joe Friday would say, “it’s just the facts, ma’me”

Two special pies are featured tonight (Tuesday, May 5)

Pea and Ricotta Pizza: Spring Peas, Whipped Ricotta, Pea Greens & Roasted Spring Onion
